Ketam Masak Lemak Cili Api

"Masak lemak cili api" is indeed very synonymous with crabs. Whenever I see crabs at the market, the first dish that I would be reminded of has always been "masak lemak cili api". Since I have 2 kgs of crab in the freezer, I wanted to prepare this meal because it has been quite long since I last had it.


And like always I'd love to share the recipe with everyone :)

Ingredients :

8 whole crabs (cut into 2 each)
3 sticks of lemon grass (bruised- partially crushed)
8 red onions *
4 cloves of garlic *
1 inch of ginger *
15 paddy chillies *
2 inches of turmeric *
1 box of Ayam Brand coconut milk
2 turmeric leaves (cut into 2 strips each)
2 slices of assam keping
2-3 cups of water
Some sugar and salt (as you like)
3 tbsp of cooking oil

Method :

1) Blend all the ingredients marked with * well.

2) Heat a saucepan and pour in the cooking oil. Stir fry the blended ingredients well.

3) Add the bruised lemon grass. Stir fry for a while.

4) Pour in the water and let it boil.

5) Add the coconut milk. Keep stirring.

6) Add in the turmeric leaves and assam keping.

7) Add in some sugar and salt.

8) When the taste is all balanced, add the crabs and let them cook well in the saucepan.

9) Now your "Ketam Masak Lemak Cili Api" is ready! ;)

Spaghetti Bolognaise with Minced Chicken and Crab Ball




Salam all,

Spaghetti bolognaise has always been an all-time favourite for both my hubby and I. But I have never tried cooking it myself since I was afraid that it would taste weird. But yesterday my hubby asked me to cook spaghetti for him, and I had this thought, why wouldn't I give it a try? Who knows it might turn out good. Hence, we went to a nearby Giant Hypermart for grocery shopping.

Here's the outcome.. And I could put a smile on my face cause hubby complimented me for this :D And I can assure you that both the ingredients and methods are really, really simple.

The recipe (serving size : 2 persons)

Ingredients :

1/2 packet of minced chicken
1/2 bottle of Prego Traditional spaghetti sauce (397g bottle)
1/2 packet of spaghetti
1/2 of a big white onion (chopped)
2 garlics (chopped)
2 tomatoes (diced)
4 tbsp of chilli sauce
5 tbsp of tomato sauce
2 teaspoons of salt
6 crab balls (any kind of ball will do - up to you)
1 cup of water
3 tbsp of cooking oil

Method :

1) Boil the spaghetti for approximately 13 minutes (see the instruction at the back of the spaghetti's cover). Add 1 teaspoon of salt into the boiling water. Toss it.

2) Boil the crab ball for a while until it is cooked.

3) Heat the frying pan and the cooking oil. Then, fry the chopped onion and garlics together with the minced chicken.

4) Add Prego sauce, chilli sauce and tomato sauce. When the gravy looks a bit thick, pour in the water. Then, add 1 teaspoon of salt. Add the diced tomatoes as well.

5) Pour the well-cooked gravy into a bowl. Put the boiled crab ball on top of the spaghetti in each plate.

6) Garnish with anything you like (I just used celery since that was the only stuff I had for garnishing :P) Your spaghetti is now ready! Deliciously easy aite ;)

Super Duper Simple Bread Pudding

Yummyyy!!

My hubby and I have had a very heavy lunch today (4 pcs of the giant-sized "udang galah" for each of us!) and tonight we feel like having something simple and sweet. Thus, since there was still a loaf of Gardenia Butterscotch bread which is supposed to expire today, I've decided to try making bread pudding using it! Actually, I've never heard anyone make bread pudding using this kind of bread since ppl usually use white bread, but giving it a try doesn't cause you any harm, aite? ;)

This recipe is ultimately easy to be prepared! It only takes 10 minutes for the ingredients to be well-stirred and approximately 40 minutes to be steamed :) So if you feel like having something sweet but despise spending lots of time in the kitchen, you can always try this at home.

Here's the recipe :

Ingredients :

1 egg
1 cup of milk (I used Dutch Lady full cream milk)
4-5 tbsp of sweetened condensed milk (my bread is sweet, if you're using white bread, do increase the measurement)
Some Corn flakes * optional (I added this because I've got corn flakes at home! Haha)
5 slices of bread (I used Gardenia Butterscotch for a change, and because that's the only bread I've got at home :P)

Method :

1) Mix all the ingredients (except for corn flakes and bread). Stir them well.
2) Get the stirred ingredients to be filtered so that your pudding will be smooth.
3) Add corn flakes, and bread slices that have been torn into pieces. Let the bread to immerse itself in the mixture for a few minutes.
4) Pour the mixture into a container that you'll use to steam it.
5) Steam the mixture for approximately 40 minutes (do cover the container using aluminium foil ya!)
6) Your bread pudding is allllll ready! You can enjoy it while its hot, or you might as well enjoy it cool (I prefer cool bread pudding :) )

3-Flavoured Fresh Water Prawn (Udang Galah XXL Masak 3 Rasa)

I got 2kgs of "Udang Galah" in the freezer right now! *excited!* My hubby bought them at Beluran, Sabah, direct from the jetty. In my whole life, this is my first time eating prawns in that gigantic size *pathetic*. My hubby requested me to cook "masak 3 rasa" for him, and I think it is such a good idea since I've been craving for "masak 3 rasa" as well!

The recipe goes as below :

Ingredients :

8 huge-sized prawns (might as well increase the number if you use normal-sized prawns)
Some turmeric powder
6-7 sticks of dried chilli (boil them)*
4 red onions*
2 garlics*
1 inch of ginger*
1 inch of belacan*
1 big onion (sliced)
5 tbsp of chilli sauce
5 tbsp of tomato sauce
4 tbsp of oyster sauce
Salt and sugar (as you like)
Some cooking oil
Some water
3 sticks of celery and 2 tomatoes (as the garnish)

1) Dredge (coat) the prawns with some turmeric powder and salt. Fry them well over a medium-high heat until they turn golden. Put them aside.

2) Blend the ingredients that are marked with * together to form paste(don't forget to use some water)

3) Heat some oil in a frying-pan and fry the sliced big onion.

4) Add the blended ingredients and fry them for a while.

5) Add chilli sauce, tomato sauce and oyster sauce.

6) Pour some water (if you like the gravy to be a bit thick, just put some)

7) Sprinkle some salt and sugar as you like.

8) When the gravy is ready, you can now add the prawns and stir them for a while.

9) Place the dish on a plate and garnish it using celeries and tomatoes :)

10) Your prawns are now ready to be served! ;)

Simple Caramel Pudding


How lucky this caramel pudding is since it's featured as the first recipe that I'd like to share thru this newly-launched blog! Actually, I got this recipe from my sister-in-law, Aidawati whose caramel pudding has astounded me at the first bite! Well, below is the recipe :

Ingredients

Mixture A :

5 tablespoons of sugar
2 tablespoons of water

Mixture B :

4 eggs
1/2 tin of sweetened condensed milk
3/4 tin of water (measure using the condensed milk's tin)
1 spoonful of Vanila Essence

Method :

1) Stir Mixture A over a medium heat (preferably using a non-stick pan since the sugar tends to stick to other regular pans). Make sure the sugar doesn't get over-burnt since it can cause the sugar to taste bitter).

2) Once Mixture A looks golden/yellowish in colour, quickly pour it onto the container (loyang) that will be used to steam the pudding later on. Leave it and let it harden.

3) Mix together Mixture B and stir it well. Don't let it turn foamy (it will cause the pudding to become perforated (having holes)

4) Pour Mixture B onto the container with Mixture A just now. Steam it for around 40-45 minutes. (don't forget to cover the container using aluminium foil !)

5) After steaming, let it cool down and place it into refrigerator. Turn it over onto a suitable plate only when it's cool (not right after steaming it). When it's completely cool, it's ready to be served!
